Mouth-watering Extra Virgin Olive Oil Chocolate Mousse! Irresistible!
Ingredients (serves 4 people)
200g Good quality dark chocolate
2/3 cup caster sugar
1 tbsp instant coffee dissolved in 1 tbsp water
2 tbsp Brandy
3/4 cup of ILIADA PDO Kalamata Extra Virgin Olive Oil
Melt the chocolate in a bowl over a simmering pan of water. Be careful not to allow the bowl to touch the water, as this will seize the chocolate.
Allow to cool slightly.
Separate the eggs. Beat the egg whites until frothy then add 1 tablespoon of sugar and beat again until a shiny “merinque” texture is formed with stiff but creamy peaks.
Beat the egg yolks with the remaining sugar until pale & thick. Add the coffee & brandy and then gently fold in ILIADA’s Kalamata PDO Extra Virgin Olive Oil & melted chocolate.
Finally, gently fold in the egg whites and pour your mixture into cake jars or ramekins and chill in the fridge overnight or until set (about 4 hours).
