Colourful, healthy and superbly tasty chicken fillets with ILIADA Olive oils and Olives!
Ingredients (serves 2 people)
2 chicken fillets
3 bell peppers, green, red and orange, thinly sliced
2 tomatoes sliced
2 potatoes sliced
1/2 cup ILIADA PDO Kalamata Extra Virgin Olive Oil
1 onion finely chopped
2 tbsps ILIADA Kalamata Pitted Olives
4-5 lettuce leaves, finely chopped
1 clove of garlic, minced
1 cup white wine
Salt & Pepper
Warm ILIADA’s Extra Virgin Olive Oil PDO Kalamata in a skillet until hot.
Season the chicken with salt & pepper to taste and add it to the skillet. Fry for 4-5 minutes until golden-brown and smother with wine. Add vegetables, onion, garlic and ILIADA Pitted Kalamata Olives.
Season slightly with salt & pepper and cook for a further 7-8 minutes.
Serve hot and accompanied by lettuce leaves sprinkled with ILIADA Extra Virgin Olive Oil and lemon juice.
