Smorrebrod with shrimp salad and ILIADA Kalamata PDO Extra Virgin Olive Oil & ILIADA Classic Roasted Red Peppers

Ingredients

  • 2 tbsp. ILIADA Kalamata PDO Extra Virgin Olive Oil
  • ½ kg / 1.1 oz small shrimps
  • 1 lemon
  • Salt & pepper

For the mayonnaise:

  • 250 ml / 8.4 fl oz ILIADA Kalamata PDO Extra Virgin Olive Oil
  • 1 egg
  • 1 tsp. mild mustard
  • 2 ½ tbsp. white vinegar
  • 1 tbsp. lemon juice
  • Salt & pepper

For the roasted red pepper pesto:

  • 4 roasted red peppers ILIADA Classic Red Roasted Peppers
  • 6-7 tbsp. ILIADA Kalamata PDO Extra Virgin Olive Oil
  • 2-3 tbsp. pine nuts

For serving

  • Mayonnaise
  • 6 slices smorrebrod
  • Chopped chives
  • Lemon slices
  • Lettuce leaves
