Greek Christmas honey cookies- melomakarona with ILIADA Kalamata PDO Extra Virgin Olive Oil

Ingredients

For the Cookies:

  • 580 ml ILIADA Kalamata PDO Extra Virgin Olive Oil
  • 500 g orange juice
  • 30g icing sugar
  • ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp cinnamon powder
  • ½ tsp clove, grated
  • Orange zest, of 1 orange
  • 1300g all-purpose flour
  • 400g walnuts, grated

For the syrup:

  • 600g water
  • 800g sugar
  • Lemon slices, of ½ lemon
  • Orange slices, from ½ orange
  • 2 cinnamon sticks
  • 2 pimpinella anisum
  • 150g honey

For the chocolate icing (optional):

  • 150g chocolate couverture
  • 150g heavy cream
  • 50g glucose
