  • 4-5kg turkey
  • 6 bacon slices
  • 150g ground pork, shoulder
  • 150g ground chicken, brisket
  • 70g chestnuts, peeled

  • 1 onion, finely chopped
  • 1 garlic clove, finely chopped
  • 100 ml brandy
  • Orange zest, of 1 orange
  • Orange juice, of 1 orange

  • 100g mustard
  • 100g. honey
  • ½ tsp cumin powder
  • 1 sage leaf
  • Salt & fresh pepper
